Amla (Indian gooseberry) is a nutritional powerhouse, known for its rich Vitamin C and antioxidant content. This traditional Gujarati-style pickle brings out its sharp tang in a flavorful, spiced oil blend — perfect with parathas, rotis, or khichdi.

This recipe is inspired by Nisha Madhulika and is a treasured addition to your homemade pickle collection — no sugar overload, just authentic flavor.

🍋 Ingredients

  • 500g (10–12 pieces) Indian Gooseberries (Amla)
  • 4 tbsp coriander seeds
  • 4 tbsp mustard seeds
  • 3 tbsp fennel seeds
  • 2 tsp fenugreek seeds
  • 1 tsp nigella seeds
  • 4 tbsp red chilli powder (mix of hot + Kashmiri suggested)
  • 1 tsp turmeric powder
  • ¼ tsp asafetida (hing)
  • 2–2½ tbsp salt (adjust to taste)
  • 1½–2 cups oil (sunflower, sesame, or mustard oil)
  • 2–3 tbsp jaggery powder

👩‍🍳 Method

  1. Wash and dry the amla thoroughly. Cut into segments, discarding the seeds.
  2. Heat 1 cup oil and gently cook amla pieces until slightly soft. Do not overcook.
  3. Separately, roast coriander, fennel, mustard, fenugreek, and nigella seeds over low heat until aromatic.
  4. Cool and grind the roasted seeds coarsely. Mix all seed powders together.
  5. Add turmeric, hing, red chilli powders, salt, and jaggery to the amla and mix well.
  6. Heat the remaining oil until hot, then pour over the mixture. Mix everything thoroughly.
  7. Once cooled, transfer to sterilized glass jars. Store in a cool, dry place.
