This lemon pickle recipe is my modified, quick-to-mature version of the traditional Indian preserved lemon. With just three ingredientsโ€”lemons, sea salt, and a few drops of mustard oilโ€”this base pickle forms the foundation for two of my upcoming favorites: sweet lemon pickle and spicy lemon pickle. Stay tuned for those!

Rather than the traditional method of keeping the lemon quarters intact, in this recipe we speed up the pickling process by fully quartering the lemons and mixing them directly with salt and oil. It's simple, clean, and delicious.

๐Ÿ“ Important Pickling Tips
Before we begin, here are some golden rules of pickle-making:

โœ… Use only fresh produce. Avoid lemons that have been stored for days or refrigerated.

โœ… Clean and pat dry all lemons thoroughly using a fresh kitchen cloth.

โœ… Sterilize all jars, spoons, and tools used in the process.

โœ… Do not refrigerate during the pickling period. Store the jar in a well-lit, warm area (like near a kitchen window).

๐Ÿง‚ Ingredients (for Base Lemon Pickle)
10 fresh lemons, cut into quarters

Juice from 2 lemons

6 tsp sea salt (adjust to taste)

2 drops mustard oil

1 sterilized glass jar

Wash & Prepare Lemons
Thoroughly wash the lemons and wipe them clean with a dry kitchen towel. Slice each lemon into quarters.

Fill the Jar
Stuff the lemon quarters tightly into a sterilized glass jar.

Add the Flavour
Add sea salt, fresh lemon juice, and just 2 drops of mustard oil. Mix or shake well.

Let It Mature
Leave the jar at room temperature for 4โ€“5 weeks, shaking or flipping the jar once or twice a day to ensure even marination.

Storage
After maturation, store in a cool, dry place. No refrigeration is required.

This pickle is not ready to eat immediately โ€“ itโ€™s a base.

Once matured, this can be transformed into Sweet Lemon Pickle or Spicy Lemon Pickle (recipes coming soon).

Rainy season is ideal for making this pickle, thanks to the availability of juicy, aromatic lemons.
